Whether for children or adults, these sugar-free courgette waffles with apple and wholemeal spelt flour turnt out perfectly crunchy on the outside and deliciously soft on the inside! Have them sweet or savoury (minus the cinnamon inside the batter) – I am sure you will become a fan!
Sugar-free courgette waffles with apple and wholemeal spelt flour
For 5-6waffles.
250 g courgette
1/2 apple
60 g butter, plus more for baking
2 eggs
300 ml oat milk (or any other plant based milk, or cow’s milk)
175 g wholemeal spelt flour
2 tsp baking powder
25 g oats (leave out for savoury version)
1 tsp ground cinnamon
Methods:
Wash and finely grate courgette and apple.
In a small saucepan, melt butter. Whisk the eggs, stir in oat milk and butter.
In a separate bowl, mix flour, baking powder, oats and cinnamon.
Mix all ingredients, you should receive a rather thick, sticky batter.
Heat the waffle iron, grease with a little butter. Bake waffle after waffle, greasing the iron as you go, and allow the waffles to cool on a baking tray, or, to keep them warm, stack on a plate.
Serve the waffles sweet or savoury; we had whole milk yoghurt, sautéed apples and cinnamon with them.
