Again and again my Instagram followers seem to be excited about my weekly granola. In my household it is a beloved breakfast, delicious dessert and a welcome late night snack.
I usually do not follow any instructions when making a new batch of granola. I simply mix oats with nuts, seeds, spices, coconut or cacao, add maple syrup and melted coconut oil to it and bake the entire mixture in the oven. A few minutes before the granola is ready, I add dried fruit such as dates, raisins or apricots.
I love the fact that granola is a great way to empty begun packages which use up space in my kitchen shelves!
Last week, I made a coconut cacao granola. The ingredients for it were: oats, puffed quinoa, puffed buckwheat, sunflower and pumpkin seeds, flaxseed, dates and coconut chips. I mixed everything together and stirred in maple syrup and coconut oil. (I use five parts maple syrup and 1 part coconut oil).
