As long as I can remember, sleep has sadly been a challenge for me. Whilst I was scared of going to bed and falling asleep as a child, later, when I moved to Berlin as a student, I remember being most scared of noises both in- and outside the house I lived in. I don’t quite remember the time when my difficulties to find sleep turned into an actual disorder, however, it is a fact that, for quite a few years so far, I struggle to sleep – sometimes more, sometimes less. I am currently stuck in a “bad“ phase, and since I think about sleep a lot anyway, I thought I finally want to write about it, too. Perhaps to give those of you, who have similar problems, tips, and to help others to better understand what it means to suffer from insomnia.

I know, I know, the vegan berry tart looks like it involves a good amount of work. And it would be a lie to say it doesn’t. On the other hand: The crust is made in 3 minutes, the chocolate melted in 5, the coconut cream whipped in another 3 minutes, and the cake assembled in, let’s say, 10 – 15 minutes. It really doesn’t take long to make the tart, but it does require some patience, tact and affection. Yeah, this tart is sensitive, I tell ya! The crust won’t be happy to be rolled out between cling film unless it is cold, the vegan vanilla custard wants to be stirred properly to soften before filling the tart with it, the chocolate filling must not remain a thin layer (the thicker it is, the harder it gets to cut the tart, and your crust may break), and the coconut…

For those who have never visited Maltby Street before, the tiny street is located between London Bridge and Bermondsey stations and is easy to find: It is located just next to the rails, right underneath the railway arches. Being a street food market rather than a farmer’s market, Maltby Street Market has everything on offer the lazy foodie (even the most passionate cook can be lazy sometimes, right?) could wish for: coffee and pastries in the morning (try Comptoir Gourmand towards the end of the market), pulled pork burgers (if that’s your thing), salmon sandwiches, pizza slices and cheese fondue for lunch time, or waffles, cake and chocolates in the afternoon, plus drinks throughout the entire day!
